Verdejo

VERDEJO IS THE GRAPE VARIETY behind some of the greatest white wines of Spain. Its high glycerol and acid content give it nutty flavors as it ages. It can be aromatic and herbaceous and capable of producing wines worth of cellaring, though usually they are to be consumed when young. 
PAIRS WITH fried vegetables, goats-cheese-stuffed baked red peppers, and smoked salmon parfait.
