Sherry

SHERRY IS A FORTIFIED WINE, produced in southwest Spain's "Sherry Triangle." There are three main varieties of sherry, but 95% of those you will find is called Palomino. More important than the sherry grapes themselves, is actually the famously complicated process of making the wine. Much of it involves non-traditional wine-making fermentation processes and adding alcohol late into the development. 

PAIRS WITH grilled shrimp, meat and ham croquettes, fresh spring rolls, sake-and-sesame-marinated salmon, Sydney rock oysters with lime vinaigrette, duck confit with roasted almond crisps, and lamb.
