Ethnic: Polish

Most people don't think of wine when considering the Old World meat-and-potatoes dishes. That doesn't mean it shouldn't be done, of course! Polish dishes tend to have more simple and basic, yet deeply rich flavors.

A Gewurztraminer from Alsace is at the top of our list. It's got good acidity and a touch of sweetness to counteract a heavy meal. Chardonnay would match (as opposed to contrast) the intensity of the rich, heavy flavors.
