With something delicate, like teriyaki, you want to have a clean, high-acid white. You don't want any one characteristic of the wine to be too dominant. Sauvignon Blanc and Pinto Grigio would be good choices for lighter Japanese fare. For those dishes with a hint of characteristic Japanese sweetness and heat, wines with a bit of residual sugar, like Riesling and Chardonnay, make good matches.
