Cheese: Fresh
Although soldom aged, these cheeses are not always necessarily fresh. The name simply implies the type. The soft, often spreadable cheeses can be anywhere from tangy to mild. Ricotta, Chevre, Feta, and Mozzarella are prime examples of Fresh cheeses. Try pairing them with Pinot Grigio, Chenin Blanc, Sauvignon Blanc, or Beaujolais to add to– but not overpower– these unique flavors.
